The gravy is there not only to infuse into the chicken breasts, making them tender and juicy, but it is so flavourful on its own, you could finish a whole loaf of bread with it.
Here's the recipe below.
2 - 3 Chicken Breasts
8 Cloves of Garlic
1/2 Lemon Sliced
1/2 Lemon Squeezed
2 Jalapenos Sliced
2 Cups of Chicken Stock
1 Cup of White Wine
Salt and Pepper to season
From start to finish
First, season your chicken breast with salt and pepper, together with a bit of olive oil. Leave it to marinate for 10 to 15 minutes.
Clean and crush the cloves of garlic on the chopping board with the palm of your hands. This will allow the flavours from the garlic to be released intensively into the dish.
On a heated pan, drop 2 tablespoons of olive oil and 1 tablespoon of butter. Once the oil is hot, put in the pressed garlic cloves. Once the garlic start to brown, add in the sliced jalapeño.
Soon after, add in your chicken breast (smooth side/skin-side down). Sheer the chicken breasts for 3-4 minutes or until they have a nice golden brown sheer.
Flip the chicken breasts over and pour into the pan, 2 cups of chicken stock and wait for the stock to come to a boil.
Once the stock is bubbling in the pan, reduce the heat to the pan and pour in the squeezed lemon juice. and add in the lemon slices. Leave the pan on the heat for another 2 minutes before adding in the white wine.
After adding in the white wine, leave the pan on the heat for another 30 seconds before serving
For a complete meal, serve the chicken with a side salad, and if you like your food spicy like us, be sure to have some Tabasco Sauce standing by.
